When should I replace v-brake pads? When they wear to the green line, the red line, or the blue line? I do know they don't wear uniformly and that they should primarily be replaced based on performance, but I was wondering.

The red line is where you'd want to switch them out. If you try to go much past the red line on the pads with posts you'll be into the steel core and on cartridge style replacement pads you'd be down to the edges of the holder.

+1. The bottom of the valley partly serves as the replacement indicator.
