Hi. Which size allan wrench do I need to get the pulleys out of a Shimano Deore Xt derailleur? (It must be metric).

It is metric. Probably a 2 or 3 mm allen key, depending on the age of the derailleur.
fwiw, ALL nuts and bolts on any bike made in the last 30 years is metric. If you do not have a metric allen key set and you ever work on bikes you need to get a metric allen key set. Trying to use SAE tools is a sure fire way to strip out nuts and bolts.

But really you should get a whole set. Not expensive.
I don't even remember the last time I used my SAE allen keys...
a whole set at WalMart or Harbor Freight or Big Lots is really cheap, as above.

a nice bondhus set will cost you all of 10 dollars
