what size bottom bracket and head set i should use for a bridge stone kabuki. i'm keeping the same fork which is a threaded fork, but i dont know the size bb. somebody please help me i'm fixed gear noob.

I would suspect the HS would 1" JIS. the BB is a slightly different story, while I again would suspect the shell is english 1.37x24 the spindle will depend on what crankset you intend to use.
spindles come in sizes from a scant 102mm for the newest Campi cranks to 122+ for older road and ATB triples.

the bottom bracket is english and i think its 68mm but i dont know the other dimensions, and the headset is threaded so you think i should use a 1"?

well considering that 1 1/8 and 1 25 are too big, what do the force tells you?? The master 2 posts before told you all the teachings to solve your "force" predicament.
