Depends a bit on how much you intend to replace.

Fork only:

- threaded or threadless
- steerer tube diameter
- steerer tube length
- axle to crown distance (rake too, if possible)
- fork compatibility with the brake of your choice

Fork + headset (+ stem) (+ bars)

- axle to crown distance (rake too, if possible)
- fork compatibility with the brake of your choice
- head tube diameter
- head tube length
- headset compatibility with the frame and the fork of your choice
- stem length, rise and bar clamp diameter, compatibility with the fork of your choice
- bar, clamp area diameter
