I need someone out there to point me in the right direction for information on where to get the following items.
I want to build a pair of custom wheels.
Where can I get a Rim, diameter is approximately, 2133.6 mm = 84 inches = 7 foot.
I made the hub, diameter is approximately, 152.4 mm = 6 inches
Where can I fiand custom spokes with the following specifications?
8G x 1016mm = 40 inches long
I will need 128 pcs. with nipples to match.
Can anyone help??
check out these wheels. might not be what you want and look like a lot of labor to build.

If you can use solid-rubber tires, then just email a couple places that build reproduction penny-farthings and ask how they do it. From the ones I've seen, all their pieces look hand-built.
If you want pneumatic tires, then AFAIK you are limited to what already exists.
I read once that Terry McLean used French agricultural tires for his monocycles but I don't know that's what he uses for all of them. The V-8 model has relatively-narrow tires (about typical motorcycle width) that are right about 6 feet tall.
