Does anyone knows if you can use a rear wheel with with a shimano 8 speed cassette on a campy equipped bicycle?

Well it depends. If it has Realy high-end Campy components, it may go through some kind of bike-snob organ rejection. :D
Seriously, tho- what group of campy components? 7/8/9 speed rear deraileur? what kind of cassette are you replacing? need more info!

Campy 8 spd has an inter-cog distance of 4.8mm.
8 spd Campy is 5mm
9spd Campy is close to 4.8, so may work.
Marchisio do cogsets that can be re-spaced for different systems.
