Cyclocross - Cross tubulars for New England terrain?

So I'm building up a set off tubular wheels to play with off-road. I'll be using them to ride on unpaved roads but am also entertaining the idea of trying cross racing. I figure anything wide will work for the playing off-road part, so I'm choosing a tire based on what would be best on your typical new england cross race. I assume they would mostly be moist but not too muddy, and with lots of grass and roots.

I think that I've narrowed the tires down to the Challenge Grifo or Fango (I have a pair of Challenge clinchers that have really impressed me). Which would you choose? Does it really matter all that much? 32c or 34c?

I own a set of both. I would go with the Challenge Grifo.

Yeah, that is my thinking. Is Aquaseal recommended for these? I hear it adds a noticeable amount of weight. Can't wait to breathe in wonderful Mastik One fumes.

I aquaseal all of my tires. I wouldn't worry about the weight.

I'm not. I mean they already weigh a decent amount. I read that you only really need to Aquaseal cotton casings. The Grifo is polyester.
