Is there any danger towards leaving deep scratches in steel exposed like in the attached images? Do I run the risk of rust, etc. if I don't cover these up? What's the easiest way to protect a bike that's been scratched like this?

I've heard clear nail polish suggested as a fix to keep it from rusting.

Top one is already rusting. Clean it and cover it with touch-up paint.

Did a search but couldn't find any info. How easy is it to clean rust and how serious of an issue is this?

I'd just clean it with alcohol or whatever degreaser and paint. It is just a dab of surface rust.

Surface rust is not a serious issue, its more of a cosmetic problem.

It will not be a risk for structural damage for the next 100 years. Put some touch up on it or ride as is.

steel wool + paint = problem solved.
