when I shift up from the smallest cog, I have to shift two times to get the chain to move up, and then it skips a cog and goes up two. I'm just learning how to make adjustments myself, but I can't find anything about how to correct this problem.
can someone tell me what causes this and what the fix is? i really want to try to fix this myself.

Insufficient cable tension can cause what you describe. Increase tension by turning the cable adjuster at the barrel adjuster on either the derailleur or (if available) the shifter. It doesn't take much adjustment to result in a considerable change in shifting behavior, so keep adjustments small.
