Thinking about trying a bar bag, but looks like virtually everything is geared toward the drop bar cockpit...

Current bike (http://klassickona.com/oldgold/2006/smoke.htm) has grip shifts and I've added bar ends and hose clamped a cheap LED flashlight to the bar.

Any ideas? I'd be willing to entertain baskets as well, but I imagine I'd have the same mounting issues as a bar bag.

I have seen Rixen and Kaul/Ortleib style mounts work perfectly well on flat bar and trekking/butterfly styles. They make an extended mount that you need for some bar styles.
This is the only kind of mount I would consider for a bar bag, lightweight, secure, quick-release. I have ridden mine down mountain trails at high speed.

I have a higher bar setup, and for My Trekking bars.. a second stem sits beneath the main stem,

the bar bag mount is fitted to a short 1" tube in the lower stem, still high enough to fit the headlight
on the fork crown.. under the bag..

hope your steerer tube is not cut as short as pictured in the factory web picture..

+1 on the Rixen and Kaul/Ortlieb bar bag mounts , have one of each.
R&K mounts are used by other bag makers too..

They make some baskets, as well, that will share the same QR mount,

Yup, kinda short , got some compromise restoration, of height,
going there, with the up angled stem..

FWIW, with a restored full 300mm,[.3M] of steerer, more things are possible..

I have an ortlieb handlebar bag and I think that it would work fine for the straight bar.

If a small bag will do, take a look at the Axiom Atlas

I roll with a vintage Cannondale Trestle bag, using Sci-Con mounting hardware, (also vintage, got it on the 'bay.) with trekking bars. They were never intended to work together, but, they do.
