Don't know about rides, but I enjoyed visiting there a few years back. I'd never seen anything like the "stony" beach.

Get yourself an Ordinance Survey Map of your local area. (4 miles to the inch, or whatever they measure in these days.) These maps are great; they show every little country road, every farm, clump of trees; it’s almost impossible to get lost. Just go exploring; you’ll love it.

I lived on the S coast for a while. The South Downs way has some good trails E and W. You can take your bike by train along the coast. Rye and Polgate are two good stops for flat exploration by bike. Eastbourne has a great switchback up to the start of the S Downs way. Hastings is good for fish and chips (above the fish market) and has a big climb and a good route to Rye. Its all pretty clear from an OS map.
HamStreet (North of Rye) has a great bikeshop for vintage and used stuf including mint NOS Campagnolo. Hastings has Ken Apps cycles at the top of the hill (London St) which is the best lightweight shop for miles around.
