You didn't mention axle size but those are 126mm and the 1-1/4 is a tire width.

Look for donor bike with a decent wheelset, or post a wtb in your local Craigslist.

These are also 126 mm (6/7-speed) OLD rear hubs but could be respaced to 120 mm, the axle shortened and the rim redished if you need to. The rear is a freewheel hub and will take 6 or 7-speed freewheels as delivered or adapted to a 5-speed freewheel as above.
As cyclist2000 mentioned, 27x1-1/4" is a tire size, not a rim size but tires that size will fit these rims fine.
