I'm looking for some steep canyons in utah with smooth pavement, and little traffic, any suggestions? I like emigration and city creek, but I'd like something new.

Well, there's Big Cottonwood, Little Cottonwood, and American Fork canyon/Alpine Loop (quite nice early in the morning). AF to Cascade Springs is my typical Saturday morning ride during the warmer months. It's a worthy climb - for me at least and the scenic beauty rivals just about anywhere.
For steep, LCC fits the bill for most - it's unrelenting 10%-12% grade for about 8 miles. Alpine Loop combined with Suncrest and LCC comprise the bulk of one of the climbing stages of the Tour of Utah. Touted the toughest stage race in the US.
Suncrest on south mountain is not a canyon, but a pretty good climb. I often do the "Double Dip" which is up and over, and then back up and over. The north side is a little tougher than the south side and its rideable right now. You'll have a while before the other options are freed from winter's grip.
I think you'll find any of these options more challenging than Emmigration canyon.

Alpine Loop and Suncrest are two of my more favorite rides with decent climbing. Also Payson Canyon (aka S. Canyon Rd or Nebo Loop Rd) has some challenging sections. Mill Creek isn't bad for an "in town" climb with little traffic.

These are close to home for me and are both great rides. Alpine Loop is has a lot of traffic on the weekends, but mid-week is not bad at all.

Sorry for the zombie bump, but how would these routes be in mid-late November? Is snow a concern? I will be there for business then and was thinking of renting a road bike for the weekend.

Suncrest is probably doable depending on the specific weather pattern, but the others are likely out. However, there are still plenty of nice places to ride in the valley. Wasatch Boulevard runs along the southeast bench and is great ride during the shoulder months when the weather cooperates. This is where I typically ride along the east side: http://www.mapmyride.com/routes/view/44146552 . It includes Suncrest and intersects the bottom of all of the canyons mentioned earlier.

That is a nice ride. May be a little chilly, but a nice ride.
