The only mechanical change I've heard is that there is now a 28T cassette available, which makes me think the rear derailleur was modified to allow the slightly larger cog (6600 max-rated cog was 27T).
(By the way, it's "mix and match.")

I believe so. However, Shimano tech documents refer to A (fully) compatibile and B (somewhat less so) compatible depending on the specific component. I am running 6700 shifters with otherwise all 6600 (actually Ultegra SL) groupset. Works great.

Yes, apart from the brakes, which do have some issues, but I have run 6700 shifters with 6600 brakes, and did't find there was any major loss in brake power. Here's the chart

I have a SRAM Elita Triple Crankset, with 6703 Derailleurs and Shifters. I'm curious towards getting a double crankset (don't ask me why), but I'm having trouble believing that the shifters wouldn't function properly given a new double front derailleur and possibly replacing the long-cage in the back. Does anyone think there's a possibility it could be made to work? Thanks for any insight.
