Hey everyone...
I bought a used mid 70's Bob Jackson and the original tires are still on it. They're 27 x 1 1/8. Is it okay to use 27 x 1 1/4 tires on these wheels?

Very definetly it is OK as far as the rims go. You'll want to check around the forks, frame and brakes to just make sure nothing is so tight fitting that an extra 1/8 to 3/16 of shape growth will be a problem.

Also bear in mind that some tire brands run bigger than others. In my experience, Panaracer Paselas tend to run big- like a 1-1/8 will be as big as a 1-1/4 from other brands.
