Is there any reason why you can't lace a 26" rim to a rear road hub with 130mm spacing? Are there durability issues?

No reason whatsoever. As long as the spoke count matched, go right ahead. MTB hubs are sometimes better sealed against water and dirt but, otherwise, they are the same.

I don't see anything worng with it, I am using MTB hubs on my road bikesw.

Just that 5mm on the rear, if your frame will take it, and you are happy with the dishing, no other issues.
