I bought a bottle when I was in France last fall. It's been 6 months and I haven't opened it because I'm not sure what to do with it.
I need the collective brain trust of Foo culinary architects to give me some guidance as to what to do with it.

Use it before it gets old which may be getting near. Eggs are a natural but anything that likes an earthy flavor is good, use the google.

Mmmmmmmm I LOVE truffle oil- black or white. First off, make sure it hasn't gone rancid. It's probably OK if the bottle is still sealed, but once you open it, keep it refrigerated or it will go south on ya. One of my favorite uses of truffle oil is as a finish on grilled fish. Salmon is best, but it works on any fish, really. Just drizzle it on the fish just before serving- the heat of the fish will develop and release the scent of the truffles- a real nose pleaser! I've also used it as a finish for chicken dishes like Suprême de Volaille (http://msglaze.typepad.com/paris/2007/12/suprme-de-volai.html) Finally, try drizzling it over pan-roasted fingerling potatoes (with garlic, rosemary, and chive, for example).
Bottom line? You can use it everywhere you want the flavor and aroma of truffles but don't want to blow the budget on the little critters. If you've never had truffles before, you're in for a real treat!

I thought of using it with pasta, but not with fish. I eat a lot of salmon so I'm going to drizzle some of the oil on it next time.
I love truffle oil, you need to be careful not to use too much. I make roasted potatoes and other veggies and toss it with truffle oil at the end, before serving. I cut small red or Yukon gold potatoes in half, add an onion, garlic, green and red bell peppers, herbs and mushrooms and oven roast them with a bit of canola or olive oil. When the potatoes are soft, place everything in a serving bowl and toss with the truffle oil. This goes well with a nice piece of wild salmon and a bottle of Oregon Pinot Noir.
Another way I use truffle oil is in a wild mushroom risotto.

Mashed potatoes. I made some vegan ones last couple of ThanksGivings. People seemed to enjoy them. I think I used white truffle oil thought.
ooooo I have never had - just seen used (go away english minded people) drippppppplingly drizzzzzled on my food! Did you open it up and (hopefully) inhale it's lovely fragrance? I would love to cook with some authentic stuff like that.
Do an inhale for me, and sorry if it smells like horse poo if it's spoiled, but I'm pretty sure it has to be good still!!!!

pasta, mash potatoes, fish, salads. yummmm i have lemon infused olive oil too and it's awesome.
