The thing that is most tricky about picking the right size 725 is taking into consideration that those frames are designed to be long and low. Base your decision of the top tube length of your current bike, not the standover.

Typically, I ride 57-58cm frames. My 725 is a 55 due to the long top tube.

Do you have a bike now? If you're comfortable on it, measure your top tube (from the center of your head tube to the center of your seat tube) and base your decision on that number.
