I am hoping that someone has some imformation for me on 2 Vintage bikes that we have.

One is an Eaton Road King, the other a SD Encore.

I am unfamiliar with the Vintage Bike Industry and was wondering if there is any value in them.

If you want to know value, there's a subforum just for that. A (decent quality, drive-side) picture is worth a 1000 words.

Depending on condition and gender, they might be worth a few dollars, depending on where the OP is located. Basically, the Road King is an entry level department store bicycle and not highly prized by collectors. That said, the younger generation is interested in the retro thing and often times willing to pay between one and two hundred dollars for such a bike.
