im building a bianchi sok SINGLE SPEED and need a stem and handlebar (flat)
does anyone know what length handlebar I need? I will have it setup as a single speed so all i need are grips, and brake levers for disc. will 600mm be enough or do I need a longer one?
and what length stem works best for mtb? shorter or longer like 120mm?

it depends on your body size, your arm length, your torso length. you don't want to be cramped, you don't want to be all stretched out.

600mm is what? Just over 23"? Yeah, that'll fit grips and brake levers. If you already have the bar, put it on and see if you like it. Sometimes a wide bar is nice for leverage, but it all just comes down to preference.

yes, it is 24". that is all i see on amazon...600mm and 680mm. is there anything shorteR? what is the minimum needed to fit grips and disc brake levers?

You can cut a bar as short as you want it. Why do you want really narrow bars though?
