Probably Yojimbo's but I've never been there and don't know the hours.

Yojimbos is super cool; I got my handlebars there. (Also, "they?" Unless you're talking about the cat playing video games, I think Yojimbos = one dude.) Barring that, I like the guys at Cycle Smithy. Well, the mechanics can be grumpy but all bike mechanics are grumpy. It's just a run of the mill bike shop though, nothing like Yojimbos.
Pony Shop in Evanston is cool too.

Yay! Just a warning - I rode right past it the first time I tried to go there. It's a ratty looking building, with no windows and a solid door and next to a vacant lot. It really is more like a guy's personal garage that he happens to sell **** out of rather than what you typically think of as a bike shop. That said, he has boxes and boxes of random parts and a lineup of complete bikes (rebuilds I assume) and is a super nice guy.

I wouldnt say that his place is ****ty. He is more about helping his customers than having the nicest place possible. Its also in what once was a pretty bad neighborhood. The projects used to be just 4 blocks away, and the row houses around the corner are a variety of public housing.
Yes, Yojimbo's is one guy - Marcus is cool as hell. Knows everything. Builds the cities best wheels. He runs weird hours, but if you want to buy something while you're there, or are going to get him publicity, call or email him. He will sometimes open up specially.

I didn't say his place is ****ty, at all. I said he sells **** out of it, but just using a cuss word instead of "stuff" because I swear too much. I just wanted to give the OP a heads up that the place is hard to find if you don't know that you're not looking for a gleaming bright well-lit shop with bikes in the windows.
No disrespect meant to Marcus at all. His cat Gracie is sweet too.
