but also i am only tailor my ride to that 100km only
so i keep up my pace
for all u who do the 300km+ do u have a fast or do u bike at slower speed and take your time to like smell the roses - so to speak?

In my limited experience- you'll always have some guys that are into ultraracing and stuff, that will do a brevet just as fast as it can be done. A lot of the people riding it will wind up in various groups. Speed is highly variable, depending on the wind, the heat, etc. And length and frequency of stops varies accordingly. In those groups, you may have one or two riders going about as fast as they can, several going at a comfortable pace, some stronger riders hanging with the group just for the company, some stronger riders hanging with the group for the benefit of the group. I think my average speed on brevets of 300k and up has ranged from 13+ mph to 18.1- the 18.1 case being a 600k with unusually favorable wind and riding in a group. If you have more people in a group, you'll wind up taking longer at stops.
In general, if no other factors come into play, I would expect to ride a little faster on a 100k than on a 300k, but not usually that different.

I find that I can recover on the bike, so I often go out with the fast guys. I have a down period at around 100km because I find it hard to eat early on. I've always started to recover at about 100 miles when my body finally decides that eating is a good idea.
