I am not too experience in Triathlon.

But one question I have is about the bike portions for most triathlons
whether it be at the iron man distance or a local one.

Are bike portions in Tri supposed to be mostly on flat courses? or some what flat with the odd hill here and there?

or do some actually have big big climbs some times?

It varies by race. Some are very flat but most have brutal hills and other challenging terrain.

Dictated by the terrain. Races such as IM Lanzarote has over 2551m elevation gain over the 180km. The Triathlon Alpe d'Huez long course includes two cols the Alpe du Grand Serre (1375 m) and Col d’Ornon (1371 m) finishing by climbing the 21 hairpins of Alpe d'Huez.
