how hard it is to peel roasted sweet potatoes? Not as much fun as I thought it would be....

Try soaking it in cold water for 30 seconds or so, that usually separates the skin from the meat in yams, eggs, chestnuts, people..

Sounds good, but I think I'll try runnin' over 'em with my bike next time;). Squirt 'em out(maybe?).

Nothin' against the skin, I just didn't think it would be aesthetically pleasing in my pie. That sig's no joke--I do likes my pie;).

Well, I baked 'em for about 45 min @400 degrees, turned the oven off without removing them, and then went to dinner with my wife. So they were in there for 2 1/2 to 3 hrs total. Mebbe I baked 'em too long? Anyhoo, I made a sweet potato pie and homemade whipped cream(mmm, mmm) and a sweet potato/pecan pie(sweet 'tater layer on the bottom, pecan pie on top-as seen on Emeril) that I haven't tried yet. It looks good, tho....

Sweet potato vodka, you say? Hmm, I'll have to look into that. Not so big on vodka since an Army buddy of mine came to visit and brought a plastic 1.75L bottle of Country Club. Yuck! The resulting drunkenness was devastating. Plus, I felt like crap cuz my ankle was broken at the time.
