Ok I am sure this has been asked many a time but my search really did not come up with the answers I am looking for.
Being I am 5'11" at 235lbs would a Hybred bike be a good option for street riding and some paved path/dirt road type of riding?
I have a Entry MTB right now a Fuji Odessa 1.0 but I am thinking it maybe just a bit easier if I get a 700c class of bike with the skinnier tires?
Any Ideas?

IMO, hybrids are cool if you plan to use them road only.
IME, I had better luck with an MTB and slicks on light trails than I did with a hybrid and knobbies.

My experience is that both will work. The MTB works better if you plan to do more dirt trail/fire road style riding. The hybrid works better if you plan to do mostly street riding. Both benefit if you get a second wheelset with different style of tires and potentially a different set of gears. For example, if you have a hybrid with existing triple crank and wide range gearing, get knobbies for that wheelset which fit your frame, and get a second, similar wheelset with same spacing and get a close-ratio cluster and slicks for city riding.

I would try some cheap slick-ish 26" tires first (Kenda Kwick Roller Sports are <$15 each in the 50-559 size). If you still need something that says "hybrid" on it after that, then you won't be out too much money.

Good point about the road bike, I guess I wondered if the skinny wheels of the road bike would support me.

Get a new bike; make it a road bike.
But that doesn't limit you to skinny tires. Look for a bike that can run, at least, 28mm wide tires. 32 is better, and probably a really good, comfortable sweet spot for somebody of your weight.

Why not go with a cyclocross bike? I've been looking at a few of these lately. They seem like the best of both worlds for someone who rides the roads but "may" want to hit a trail now and again. ...and you don't have to deal with the flat bar! I wish I would have looked at these 6 months ago.
Am I way off on this?
I have Trek 7.3 FX and love it. However I am now looking at getting a road bike because that is all I ride on for the most part. I have ridden a few dirt roads and I am not a fan of it. I am 5'11" and 270lbs and have no problems with the bike supporting me in any way shape or form.

As others have said keep the MTB and get a road bike; buy some cheap 700x32's to use now and go back to the smaller tires when you lose weight and you most likly will or for the times you are doing a event ride and want to have less rolling resistance. I ride a 700c hybred and will be looking to narrow my tires to more of a road bike configuration before I ride a long event ride. Unless of course I go N+1 and get a road bike! yes, I am think about that!! three 700c hybreds at my house now (2 mine (sort of --- my son has grown long legged enough to fit the smaller specialized I boought used) and my trek 720 I bought new both 20 plus years ago) and my wifes we bought two or three years back that fit her better than the specialized.
