You need a ham hock, a pressure cooker, pot liquor, some vinegar, and a hot pepper on the side of the plate.
Some black eyed peas cooked with fat back and spoon full of tomato relish on top, and a fried pork chop.
Need cracklin' cornbread to sop all up, and iced tea with mint to wash it down (the hardcore drink buttermilk).
Yellow cake with chocolate frosting and coffee to top it off.

I ate collard greens for lunch today. mmm. I love just about all leafy greens. Collard, Kale, Swiss Chard, Beet Tops, mmm.

I'll eat anything green, love it all. My family up north gets fiddleheads every spring, man I love me some fiddleheads. Would you eat these greens?

Pine needle tea has plentiful amounts of vitamin C (10 to one compared to orange juice). Great when citrus is not in season.

Born and raised in So Cal (with roots in Mexican and German foods primarily) and I absolutely love them boiled in sea salt water and served with anything except pancakes, or just by themselvess. I would have never tried them except that they came on the plate of one of my favorites at Kathie's in Las Vegas, and it was love at first bite. They actually opened me up to trying everything "soul food".....
And +1 on the ham hocks, black eyed peas, fat back, and fried pork chops....
The Collards grown here are so tasty, never bitter. I chop them and put them in a sauce pan with vegetable broth and water, let them simmer on the stove top for a while. So good and so good for you, why ruin them with all those fatty things?????

Mmmm, haven't had fiddleheads in years. Love them! The house I grew up in was on a river, and we used to be able to pick them every spring.

Collard greens aren't bitter. Mustard Greens and Turnip greens maybe. I like Lacinato Kale but haven't warmed up to regular Kale yet.

They will actually grow through the winter (usually) here in GA. I'm gonna start some today.

Bleh, my grandpa used to force collards on us. I'll never eat them again.
