More information would certainly help.
You can probably do what you want to do so long as the rear shifter matches the number of cogs on the cassette or freewheel, and the shifter cable pull is fully compatible with the actuation ratio of the rear derailleur. Or if the new shifters are friction control, not indexed.
You will also need adapters on the downtube shifter bosses to use as cable housing stops.

Probably can't use SRAM red shifters on a "classic steel bike" unless you intend to do a major drivetrain replacement. Those don't have the friction setting like Shimano, do they?

Sram shifters have friction FD shifting and indexed rear shifting. Might have to get two front TT shifters.

All downtube and barend shifters are friction for front shifting. Most Shimano's have a friction option for the rear shifting also.
The required cable housing stops that fit over the downtube shifter bosses should be available by the dozens at any LBS. Shimano packed a set with every replacement pair of STI and barend shifters and most weren't needed because the bike already had them.
