Is there anyone that specializes in re-painting vintage Schwinn Paramount's? I know nothing about the high end bikes and would like a little information please.
Waterford (formerly Paramount) is one place to go, though Brian Baylis did mine.

Matt Assenmacher in Swartz Creek, MI did a very nice restoration repaint/decal job on my '85 Waterford Paramount.

That is a beautiful old Paramount.
Can anyone tell me what the correct wheelset is for a '73 Paramount or was there more than one option?

Welcome to the Bike Forums.
It is so tempting to paint an old road bicycle. A scratch here, and a chip there. A bit, or a lot, of art missing. When is painting a bicycle warranted? The answer might prove surprising and should reveal itself in Should I Paint My Bicycle? (http://www.mytenspeeds.com/My_TenSpeeds_1/Site%20Contents/How_To_Do_It/PAINT_OR_NOT/PAINT_OR_NOT_1_Start.htm)
I urge you to have a look through that article and then apply what you learn to your bicycle.
Also, since you admit to knowing little about high end bikes, you might want to spend some time looking at some of the other feature articles on my website. The main purpose of the site is to help you, and others just getting into the interest of old bicycles, learn quickly and avoid costly and frustrating mistakes.

It depends on which model Paramount. Here are the 1973 Paramount specifications for all four models:

The "Schwinn-Approved" rims on my '72 P15 are Weinmann clinchers (not the best rim choice for modern tires however).

My '72 P15 came from the factory with Mavic Championnat Du Monde tubular rims. I relaced the Record high flange hubs to 700c Open Pro clincher rims.
Where are you located and how big is your wallet?
