I have an old (but decent) 28" wheel. Was thinking of getting a 35mm studded winter tire on it to change the front wheel if there is some ice in the mornings.

Has anyone got experience with such combinations? Will the rim bee too thick?

I have MTB rims that are 23mm on the outside and run 2.1" (50+mm) on them all the time. They start to roll over in turns once the pressure gets below 25psi or so but ride fine otherwise.
