Built a wheel from an old Suntour rear hub and now can't find a cassette to fit. Any chance I can pull the freehub body off and replace with something more standard (eg. Shimano) without destroying the wheel? Any help greatly appreciated.

Suntour freehubs and the cassettes that go with them are orphans, long since discontinued when Suntour was bought out by SR. You have two choices:
1. Find a Suntour cassette, possibly from a donor bike or pay through the nose on ebay.
2. Rebuild the wheel with a Shimano Freehub hub, hopefully the dimensions will be the same so you can re-use the spokes. This is the only "sustainable" option because Suntour cassettes were only made for a couple years and are now virtually extinct. I won't even buy a used bike with Suntour indexed components for this reason, unless I'm only after the frame and can get a serious discount.
Next time figure out your drivetrain before building your wheels is all I can say, sorry dude.

1. Show us a pic of the shell / freehub mating.
2. Report on what size allen fits.
3. Report on whether a non-drive allen bolt is used as well.

If you really want a Suntour cassette, I think the LBS I work at still has some NOS we were planning to eBay. If you need to scrape by for the short term, I can see if we have what you need. In that case, post what variant of cassette your hub requires and I can check. But if it were me, I'd just grab an affordable Shimano hub and rebuild the wheel with that. Hey, you'll have a leftover Suntour hub to sell for outrageous prices on Ebay when you're done... :D

Thanks for all the advise-the shop has several Shimano hubs I can rebuild the wheel around-they're just not in as good of shape as the one I used (and stupidly assumed would have the cassette for). Lesson learned.
