I just mix coconut rum (Bicardi, not the half strength Malibu stuff) with pineapple for a quick shot of Vit.C and Vit.A(lcohol) one one glass. Coconut rum is also a great addition to pineapple upside down cakes.

oh man....that reminds me of where I used to work. Lady would make rum cake for the holiday party. Basically, she'd bake a cake and just before the party pour an entire 750ml bottle of bacardi over it. That stuff was awesome.
Drank more than my share of this back in the sailboat racing days. We had one boat in the fleet that would make it by the gallon if we would bring the rum and other ingredients. Sail by between races and get refills.
The saying is: 1 part sour, 2 parts sweet, 3 parts strong and 4 parts weak.
1 cup fresh lime juice
2 cups grenadine (http://www.foodterms.com/encyclopedia/grenadine/index.html) syrup
2 cups Jamaican white rum
1 cup light rum
2 cups fresh pineapple (http://www.foodterms.com/encyclopedia/pineapple/index.html) juice
2 cups fresh orange juice (http://www.foodterms.com/encyclopedia/orange/index.html)
Pinch freshly grated nutmeg, optional
Orange slices, for garnish
Pineapple slices, for garnish
Mix all ingredients together in a pitcher or punch bowl. Chill in the refrigerator for at least 1 hour before serving. Garnish (http://www.foodterms.com/encyclopedia/garnish/index.html) with orange or pineapple slices.
We made onboard in a big plastic water cooler. Did not add the fruit slices. Served it over ice.
There was one regatta where I froze bananas, and used sliced frozen banana instead of ice for my rum punch. That was my breakfast most mornings. Drink the punch then eat the banana slices.

Well, this thread cuts right next to my liver. My rum-snob commandments...
-no Bacardi...ever. Life is too short to drink bad rum.
-Find a good aged rum, add one ice cube, sip slowly and enjoy.
-Ron Zacapa, yes it is that good - and if you mix it with anything, prepare to have a giant facepalm put in your mailbox.
-A close second place is ron pampero aniversario rum. It comes in a neat little leather sack. Great and cheaper than Zacapa at ~$30 for a fifth.
-For mixing, you can't go wrong with the Cruzan brand. Cheap, but a really good flavor and has none of the "i just drank lighter fluid with some caramel added" like Bacardi. And from experience, they must distill it in a good way, because the hangover cogener potential is much lower versus other cheap dark rums.
-Other good dark rums...Ron Matusalem, El Dorado, Vizcaya, Flor de Cana, Diplomatico Reserva or Presidente.

The secret to a good Cubu Libre, is Mexican Coke, made with sugar. Get it at Costco. Ice, rum, Mexican Coke, 1/8 of a lime.
Gonna have me a few tonight.

Jamaican white rum is sometimes overproof. Most light rums are around 80 proof. Jamaican white rum can be as high as 151 proof.
I have a friend who spent some time in Jamaica drinking overproof rum. It was so strong that it made him hoarse. An old woman at a rum bar told him he had to mix it with something or he was going to hurt himself.

My favorite: get a 20 oz glass, add a few ice cubes, fill almost to the top with Coke or Pepsi, add 1-2 oz of rum, and stir lightly - great for watching movies (at home!) or sports. Don't put the rum in first, then add the cola - the aggresive mixing that'll occur seems to take away the flavor taht the rum imparts on the cola.
Also try it with Vanilla Coke (if you can find it anymore) - similar to adding spiced rum.
Bourbon can be use if no rum available, but rum tastes better.

Probably Bacardi in my college days. Never had a bad rum straight. Of course I didn't start drinking run straight until I had acquired taste.

It's RUM cake, it has to have some RUM in it. Years ago I looked at a recipe for rum cake, it said to add a couple of ounces of rum to the batter and maybe a couple more ounces to the glaze. Most of this would evaporate during and after the cooking. So I made my own cake and put a lot more rum in it, but I don't know how you could pour a whole bottle on it without it becoming too soggy. I might try to make one again this year.

+1 I have a recipe for rum cake that uses a box cake mix. Instead of adding 1 cup of water you substitute 1 cup of rum, then pour a rum-sugar glaze over the finished cake. Yum.

Straight brandy is my favorite, rum is next. No ice please. The cubes just take up room in the glass.
I can't stand recipes that want rum in a cake or even coffee. Alcohol boils at 140 F. After you bake a cake you'll have some of the flavor left, but unfortunately it won't be able to affect your judgement.

I used to work in the Bahamas and fruit juice cost more than rum... best drink on a hot day is dark rum with grapefruit juice and am looking forward to have Cuba Libras with my wife. She gets this rather excellent Puerto Rican rum and with fresh lime and real Coke heaven will just be a little sweeter.
