It seems that I'm having some trouble getting out of a rut. I train very regularly and it seems that I have reached a plane in weight and in endurance. I'm having trouble losing that oh so dreaded "last ten pounds" and when it comes to endurance it seems that no matter how hard I try I can't break my mileage goals. I always try to vary my workouts and vary my speeds, I also cross-train with other sports to break repetition in muscle use and my diet is very good. Should I be cutting back ( like a slim-fast diet or something? ) or trying to go more and pushing harder with my workouts and rides? Thank you for any help in this matter.

You seem to be working on weight, endurance, mileage goals, diet, crosstraining, etc. There's a lot going on! Perhaps you could try focusing intensely on one thing for a while (maybe a month) then switch to something else. I think this is called periodization, which is pretty popular. Google it to find out more.
I'm not a cycling coach, but I did stay at a Holiday Inn last night. :)

well I found myself in a similar position a few weeks ago. I ride an exercise bike (for now) and wha I did was up my workout by 15 minutes and up my incline. The weight seems to be dropping off again. And I acutally increased my caloric intake by adding breakfast every day. Eating smaller and more often is better than eating larger and less often I recently found out :)

Lots of good advise there; my new strategy is when I get my new bike(that will actualy FIT) take my riding to a new level and watch the fat burn, just hope my knees can take it.
