I have a gary fischer 29er and I was wondering if I put a 700c road style tire on the back if it'd fit a cycleops wind trainer???

Yep. That is what my buddy did last year with his 29'er. Smooth 700c tire, and sweatin' to the view that NEVER seems to change. :)
Sure, just get one wide enough for the rim. You can get a cheap 32-35mm tire that would suffice.

Instead, get a trainer-specific tire. Conti Hometrainer or somesuch will last you longer and won't leave little black pellets all over your house.
