I have a Fisher Big Sur (2002) with a worn Shimano BB-LP28 bottom bracket. It looks like the Shimano BB-LP28 is hard to come by. Is there an alternative to the Shimano BB-LP28? Would I have to replace the crank set if I were to upgrade and choose a different bottom bracket?

The BB-LP28 is a very standard English threaded 113 mm spindle length cartridge bottom bracket nearly identical with the BB-UN26 but made for an MTB 73 mm bottom bracket shell instead of a road width 68 mm.
