are there any products on the market which charge electronics as you bike?
I saw one made by a chinese company but it looks like it's designed for their specific bicycle.

Yes, there are.
Take, for example, my cell phone. It comes with a charger. I plug the charger into the wall outlet and into the phone, and it charges the phone. And while it is charging I can do whatever I want: sleep, eat, watch TV, play chess etc. I can bike too.

I use a PedalPower+ Super-i-Cable (http://www.aushiker.com/pedalpower-super-i-cable/) which is connected via piggy-back terminals to a SON 28 dynamo (http://www.nabendynamo.de/). This allows me to either power my lights or charge/power my Garmin Edge 800 (http://www.garmin.com/) and hopefully once a new connector arrives my Google Nexus (http://www.google.com/nexus/) phone as well.

I would love the pedalpower + super i-cable, but I've read that it doesn't work as well with a son20r hub.
I'm starting to think that getting an external battery will be better for me.

This seems to come with a 12V bottle dynamo and won't work with a 6V hub dynamo. If you don't mind using a bottle dynamo it's probably fine. They are obviously cutting corners by using a 12V dynamo- much easier to rectify 12V down to 5V then 6V down to 5V.
