Now I understand the purpose of skinsuits in time trials, road races, criteriums, etc., but I don't get why they're also used for cyclocross a lot. Since you're not cutting through the wind at your maximum speed (usually far from it), what advantages do they give you? It seems like skinsuits are advertised as being for cyclocross just as much as everything else, and I've seen plenty of them in these events. What gives?

Skinsuits don't ride up your back when you shoulder your bike and run like bike jerseys tend to do, and the tight skin suits don't catch on parts of the bike as it's being shouldered. The back pockets of 'normal' cycling jerseys aren't needed with the short cross races.
Actually the speed can get pretty high in cyclocross. That is one thing most new riders don't understand. You can get a road section where you're pushing 30, so it doesn't hurt to be aero. And others above made some valid comments as well.
