1 package tricolor rotini pasta 8/12 oz cooked washed and chilled.
1 package cherry tomatoes halved 8 oz.
1 diced green bell peper.
2 diced green onions.
1 small can sliced black olives.
1 small can diced green chilies.

Low sodium taco seasoning packet.
1/2 cup water
splash viniger
4 oz sour cream
whip this up in a bowl and add everything from the top list.

Garnish with salsa, taco chips, grated cheese to taste.

Yum.

I have always been a believer in Carbo Loading before any of the longer rides and is probably the most enjoyable part of the training.

I'm kind of leery of packaged seasoning packets so I'd substitute real seasonings, but it looks like a good meal.
