Would really appreciate some pro advice on carbs who are gluten or better yet, grain free. Just starting again after 4yrs of being off of a bike since I was diagnosed with diabetes and sorta gave up. Trying to get my life and my health back!

Have you done an isolated food test?

I get quick high blood sugar from eating , rice, potatoes, and beans.
Try to never eat them.

Corn products I can eat and is good for my long rides.

I do not eat any grains at all. I do eat minimum amount of potato but purple or sweet only. I eat lots of beans and use bean flours. No rice or corn in my diet at all anymore. I have not done the isolated food test but since I have given up grains completely my blood sugar has been in the normal range. I am concerned because I used to eat whole grain bread with peanut butter before a ride and whole grain pasta the day before, but since I have stopped eating bread and pasta of any kind I am not sure what I should be eating and am really wanting to know what the carb, protein, fat ratio (ideally) should be. I get a lot of healthy fats because of the nut flours I use.
