Currently have stock Madone 4.5 with 105 cassette (12-30) Want to change to ultegra. Wondering what would be the best ratio on cassette. Also what else would I have to change component wise if I change to the Ultegra?

The best ratio on the cassette depends on how strong a rider you are, how hilly the terrain you ride is, etc. Do you need lower gears? Do you not ever use your lowest gears?
You don't have to change anything to switch to an Ultegra cassette. Everything in the Shimano line is interchangeable. Only thing you need to worry about is matching the number of gears to what you currently have.
