Just to get this going, here's one of mine....BBQ Beef Country Ribs.

Rub is brown sugar, chipotle, paprika, onion and garlic powder, alllspice, and a bit of tenderizer. BBQ slow and low at*200 - 250 until done (160 at core).
Funny you should ask. I was gonna say country ribs. The secret to tender ribs on the grill is....lower heat and therefore slower cooking? I usually make them in the oven for the better temp control.

Yep, I use an offset firebox smoker grill for that very reason. Set the dampers right, and I get great temp control and indirect heat.

When I fire up the grill the likelihood of me making Souvlakis and grilled Asparagus is extremely high and am not much for sauces... I leave the ribs to my sister in law who makes the best ribs I have ever tasted.
Place raw onion rings on a cedar plank, place salmon filet on onion rings, season.
Place plank on grill that has been pre-heated, adjust flame so it smolders the bottom of the plank. (have squirt water handy to put out flames)
Smokes and bakes at same time, cook 10 - 15 minutes.

Mix some beer, some molasses, some garlic, some onion, some tomato paste, and a fistful of BBQ type seasonings. It should be a little thicker than regular ketchup. Smear is all over what you are cooking (beef, pork, chicken, it doesn't matter). Cook it up. Trust me, this is very yummy.
