I need some suggestions.....what should I BBQ next (That will fit in my smoker......no suggestions like smoked whole elephants or Blue Whales)

I've done beef, chicken, mutton, Goose, Turkey, pork loins and ribs, and I want5 a new challenge. Oh, I've also smoked herring, pollock, cod, and salmon.

Tuna steaks?
Kangaroo steaks, perhaps?

I did some ahi tuna steaks on the BBQ a few weeks ago. Very nice.

For some reason pizza keeps coming to mind. I know you did smoked lasagna, but a smoked pizza sounds kind of nice if you could keep the crust from getting to smoky tasting.

I cook pizza on the GF's *****in' new grill last weekend and it came out great! It had a nice crisp crust that I was hoping for. A friend used to take a Dutch oven with when he went camping and make deep dish pizza then, you don't have to cook it inside.

Yes, it was really mutton. I made Western Kentucky pulled mutton BBQ. Slow cooked mutton tastes great, and is tender because of the low and slow cook process.

and Lamb is far too mild for smoking. It's a waste, and tasted much better roasted and rare.

There's a Jamaican jerk place in philly that makes stupidly good jerked goat.

I imagine goat would smoke up real good.

Is that the Jamaican Jerk Center down my the airport somewhere? We used to drive by it every time we were in town when my wife had friends in Philly.

I'm pretty sure I've done lamb and had it come out very very good. Ugly Brothers recipe if I remember right. Garlic and rosmary if I remember right.

How about trying breakfast? There has to be something there for someone with your sense of adventure.

I'll plant a seed I want planted while I'm at it. How about figuring out a breakfast BBQ that will hold. So start it at the end of a long night and have it ready when you crawl out of bed the next morning.

Mutton tastes like wet wool smells.

I grew up on a sheep farm and won't touch the stuff.

Some lamb loin grilled though... glorious.

20grit, have you ever tried mutton as WK BBQ? It doesn't taste like wet wool smells, I can assure you. It's actually pretty dang good. Use hickory to smoke it, or pecan.

Venison jerky - I have no idea how you'd do it but I guess smoking it is a start.

150-175 in the smoker, sliced thin and on racks after a marinade and seasoning. Takes about 12 hours.

My wife's sister's husband is from Cambodia. As far as I can tell, he has never tried to serve me serpent. I hear he makes a mean chicken dish, though.

When I bbq'ed the tuna, I had to soak in in olive oil for a little while so it had some fat in it. It's a very lean fish.
