I'm looking for a good 26" tire for brevets, ideally folding-bead to reduce weight and so I can keep a spare in my handlebar bag.

I've been riding on 26x1.25" Panaracer RiBiMos; they're okay, though they seem to have worn out pretty quickly (at least as compared to the 700c Marathons that I ran on my previous bike). Stuff that I can find readily available seems to be:

Panaracer RiBiMo, 26x1.25"
Panaracer Pasela, 26x1.25"
Panaracer T-Serv, 26x1.25"
Schwalbe Kojak, 26x1.35"
Schwalbe Marathon Racer, 26x1.5" (seems wide?)
Schwalbe Marathon Plus, 26x1.35" (wire-bead only, and crazy heavy)
Specialized FatBoy, 26x1.25 (kind of hard to find)

Anyone have any opinions on these?

Other good options that I'm missing?

If you can fit them, there's also the Compass 26x1.75 (http://www.compasscycle.com/tires_comp_26_175.html). 440 g isn't bad for a tire that wide and people generally seem to love the various tires offered by Compass.

I've used the Kojak and Marathon Racer on your list. The Racers are a bit overkill for most roads, IMO. I use Kojaks for rando. Fast rolling and pretty durable. It's been theorized that the only difference between these two tires is size, rubber thickness, and tread pattern - that they have the same casing construction. The Racer just has more of everything and so that puts it further to the more durable but slower side of things.
