What is the best way to watch the Vuelta?
Comcast dropped Universal Sports. Universal's website no longer offers a subscription streaming option. You can stream from the website if you are a Dish or DirectTV subscriber. I am not, though I could drop my Comcast sports package and get a Dish subscription.

Steephill is definitely the way to go. The thing is, you have to start watching it at 9, I think.. That's too early for me unless I'm at work...

Can't say if it would be worthwhile for you to get a Dish or DirecTV subscription, but I have the latter and will be adding a 'sports package' for a month (at about $12) in order to get the Vuelta---for the first time. HD (I assume) and I'll be able to DVR it and watch at leisure. The Tour started while we were away last month so we watched it almost a week behind...in the US it's not like the Tour is front page news though I did have an inkling who the winner was going to be before we watched it. ;)

I dumped cable for DirecTV when OLN got the TdF rights, and the cable system didn't carry it.
I dumped DirecTV during the OLN/Versus flap, after having been with them for 10 years.
Signed up with DishNetwork and that's worked fine, but I'd dump them too if they pulled any BS.
It's really not such a big deal to switch providers and there's usually a good deal to entice you.

Others mentioned some good options, but to my knowledge neither of them have archived streaming available. If you're like most of us and work during the times when the live races are on, it's difficult to follow them. Cycling.tv offers archived coverage of most major races, so you may want to check them out. They are subscription, though.
I'm betting Universal Sports will realize they made the dumbest move ever once the Olympics are over and start offering pay packages again. After all, some revenue is better than no revenue and no revenue's exactly what they're getting from the millions of people that are subscription video customers but don't have DirecTV.
Cycling.tv only offers 5 min highlights of each Vuelta stage :-(
