Any chance you can get mud inside the calipers or outide for that matter and cause them to get stuck on or severely drag?

I can't imagine not filling the inside of the caliper with mud, but I would imagine the rotor cuts through it pretty easily. Just like rim brakes, each application of the brake will clear the braking surface.
I think that the piston area behind the brake pad is relatively solid (it's basically a screw that pushes the pad forward), so there shouldn't be any problem with the brakes getting stuck on from mud getting in there.

No. That's actually one of the advantages of discs for both bikes and cars.

you swap for a clean bike, handed off, when the course passes the pits..
mud has to be deep to be up to the disc, on the hub.
Oily mud will contaminate the pads and disc.
It's the oil that is the problem..
