Foo - What am I going to do with all these beans?

In an effort to win the war on Zombies, I've purchased around 20 lbs of beans. The problem is, I don't know what soup and or dish to make with them. Let's say, I have a hankering for Pinto Beans and let's say you are all extremely intelligent people who have ideas on how and what to cook with said Pinto Beans. Let's also assume Han shot first.
So, I'm asking you to provide a nice Pinto Bean recipe. Keep in mind I have 15 lbs of Brown Rice as well.

20 lbs dried? That's one hell of a lot of beans. My advice, build a pea shooter gun to ping neighbor kids when they get too close to your lawn.

apparently, you need Inge to go catch you a whole crap-ton of moles. Then you cut off their asses and throw those mole asses in to a big dutch oven or other heavy pot with your beans (rehydrated) and a hunk of bacon (careful, this part is tricky because cops tend to get pissed off when you cut a hunk out of their sides, and they tend to be armed) and throw it in your oven on low heat for 8-12 hours. Probably oughta skin the moles before you do this or you'll get a bunch of hair in there. Oh, and if you catch the cop just after he's had his donut fix (which makes them slower and easier to catch/harvest the bacon) there might already be a fair bit of sugar so you could probably cut back on the mole ass and replace it with vole or shrew ass instead.

Ham & Bean Soup1 pound dried Great Northern Beans, soaked overnight or via theQuick Soak Method (http://addmorewine.net/2009/01/17/quick-soak-method-for-dried-beans/) and drained. (Some say drain after soaking, others don’t, I don’t think it matters *that* much.)
1-2 ham hocks (depends on size, I used 2)
~ 3/4 c. chopped carrots (~1 medium carrot)
~ 3/4 c. chopped celery (~1.5 stalks)
~ 3/4 c. chopped sweet onion (I went with a somewhat large chop, and chose sweet over white since the white onions this season have been incredibly strong, and I didn’t want it to overpower the rest of the soup.)
~1-2 cloves garlic, smashed
2-4 c. water
2-4 c. chicken stock
1 ham steak, diced or shredded (optional, but that way you get more ham in the soup!)
ground black pepperSweat the onions, garlic and celery over medium low heat with about half the ham steak pieces. (The ham adds a little more fat for the aromatics to happily bathe in. Or, “it seemed like a good idea at the time!”)Once the onions are soft, add the ham hocks, the rest of the ham steak, 2 cups of water and 2 cups of stock. (That was how much was needed to cover everything in liquid.) Bring to a boil. (Takes 10-15 minutes.)Add the beans, carrots and a few shakes of black pepper, and if needed, a little more water if the beans aren’t covered by liquid. Give it all a good stir and bring to a boil again.Reduce heat to low and cover. Check about every 30 minutes and add more liquid (half water/stock) if needed.Simmer for 1.5 to 2 hours or until beans are tender. When the skin on the beans splits when you blow on them, they are supposedly done. However, the skins were splitting about an hour into it, and the beans didn’t taste “done” to me.An hour and a half in, I took out the ham hocks and let it simmer on low for another 30 minutes uncovered. Up until this point, the soup hadn’t been very thick at all, and I was ready to add some cornstarch, but it decided to cooperate and thicken up nicely. (Probably because at this point the beans are technically overcooked, but who cares, they’re nice and soft and tasty!)

Pinto Bean Burgers (Asian style)
1/2 cup diced onion
1/2 cup panko breadcrumbs
1/4 cup chopped cilantro
2 finely minced jalapeņo pepper
2 tablespoon sour cream or creme fraise
1 teaspoon Sriracha pepper sauce
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/8 teaspoon salt
1 large egg
1 (15-ounce) can pinto beans, drained
1 8 oz. can whole-kernel corn, drained
Preparation
1. Combine the ingredients in a large bowl.
2. Add pinto beans and corn; partially mash with a fork.
3. Divide into 4 equal patties
4.Refrigerate for 10 minutes before cooking in a shallow frypan.
Pinto Beans with Ham Hocks
1 pound dry pinto beans
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 pound ham hocks
4 cups water
1 onion, chopped
Preparation
1. Wash the beans thouroghly several times and soak overnight in cold water.
2. Drain the beans and dump into slow cooker. Stir in chili powder and oregano.
3. Pre-soak ham hock in a separate pot for at least 2 hours with water or stock just covering the meat.
4. Add ham hock to a crock pot with beansand pour in liquid ham hock was soaked in. 5. Add more water until ham hock is completely covered.
6. Add onions to crock potand stir well. Season, to taste
7. Cover the pot, and cook on high for about 5 hours, or until beans are very tender.
Just Pinto Beans
1 1/2 lb. (about 4 cups) dried pinto beans
1 tablespoon vegetable oil
4 slices thick-cut bacon, coarsely chopped
1 onion, chopped (about 1 1/2 cups)
4 garlic cloves finely chopped
2 jalapeņos finely minced
Kosher salt (to taste)
1/2 cups crumbled casa fresco or feta cheese, crumbled
Finely chopped fresh cilantro
Preparation
1. Place beans in a large pot. Add enough water to cover by 4". Let soak overnight. 2. Drain beans.
3. Heat 1 Tbsp. oil in same large heavy pot over medium heat.
4. Add bacon to pot and cook until crisp, stirring occasionally. Using a slotted spoon, transfer bacon to paper towels to drain.
5. Pour off all but 2 Tbsp. drippings from pot.
6. Add onion, garlic, and 1 minced jalapeņo and cook, stirring often, until soft, about 10 minutes.
7. Add drained beans to pot. Pour in enough water to cover beans by 2" (about 8 cups).
8. Bring to a boil, reduce heat to medium-low, and simmer, stirring occasionally and adding more water by 1/2-cupfuls if dry, until beans are tender, about 2 hours.
9.Stir in remaining jalapeņo and reserved bacon. Season to taste with salt.
10. Let cool slightly. Chill uncovered until cold, then cover and keep chilled.
11. Rewarm before serving, adding additional water as needed if dry.
12. Transfer beans to a large bowl. Sprinkle with cheese and cilantro.

Couch, swap the Sriracha and sour cream or creme fraise on the burgers for Tapatio or Valentino hot sauce and Casa Fresco, or use a Mortons Carabbian/Jerk seasoning on them to turn them more North American, and they will grill up just fine on a BBQ if you treat them like a fine fish and grill them on a piece of aluminum foil.
BTW: 20lbs of beans is just another good reason to invite friends to dinner, and I find one at least once a week just for fun..... :D

Simple fixes to post-bean flatulence.
1. Rinse the beans several times very thoroughly, and after allowing them to soak overnight change the water again before cooking.
2. Add a 1/4 of a teaspoon of epazote (taste like crap so use very sparingly) or a whole teapoon of baking soda when cooking the beans.
3. Cook the beans until they are very soft. Beans are not a friggin' pasta, and they should never be left al dente. Beans need to be cooked until all of the gases have cooked out.
4. Eat beans more often. Your body adapts and the flatulence decreases.
