im aware that there are french threaded hubs/freewheels, but are there any italian hubs that will only accept certain freewheel threadings, or will ISO work on them?

TPI is same for both but BSC freewheels are .2 mm small in diameter. Italian threaded hubs will take a BSC freewheel, but you may damage the threads slightly in doing so.

its not gonna be easy to find the proper freewheel these days though... so should i just use todays standard?

BSC will be a loose fit on an Italian hub, but if you're light and not a sprinter it should be ok. or so sutherland's says, i've never done it personally.

You can put an English thread freewheel on an Italin threaded hub, but you can't put an Italian threaded freewheel back onto that hub.
