I just ordered a Surly Cross Check and am going to run an old Ultegra double up front and a mountain bike cassette in the rear. I have an old Deore LX 8 speed derailleur in the parts bin and am wondering if that will work ok with a 9 speed chain.

almost certainly. You may just have to adjust the upper and lower stops. I currently have an old "7spd" 105 rear derailleur on a 9spd STI setup on one of my bikes. works fab-o. the thing to watch is that your index shifters are designed for the same as your cassette - i.e. 8spd.
