I must admit to a lifelong, terrible weakness for Cornbread. So, what's everyone like for mix? Or do you go all out
and go totally homemade? I find Trader Joe's mix to be very good, and easy.

My dad is an old southern cook, older than all of you guys put together. He uses something called "corn kits" that he buys in the grocery store.

mmm, I love cornbread. I only have it maybe once or twice a year, though we almost always have at least a box or two of Jiffy mix.

I'm a yankee but have always liked corn bread, as long as it's sweet and light. We always use Jiffy mix but the Martha White is also good. Besides just slathered with butter I just LOVE it buttered and with maple syrup over it - man a delicious dessert!
Jiffy. Although I seldom make it, I do love it.

I cut up a couple pieces of bacon and cook it in a cast iron skillet. When it's crispy done, I stir the bacon into the batter, and drain most of the bacon drippings from the skillet. Then pour the batter into the skillet and put it into the oven. I also use green chilies ( Anaheims) instead of Jalapeno peppers.

I use my grandma's recipe that's from Boston, so no bacon or peppers. It is generally served with liberal amounts of butter and honey.

Really cornbread's the only thing I miss because the few other food items I miss I can make successfully myself. But no matter what I do my cornbread will never be like that of my mom or one of my former coworkers. And I don't really like about 90% of traditionally southern dishes. Where I used to work the aforementioned coworker and my boss would occasionally cook up a huge meal for all the employees (which was an awesome thing for them to do), and typically the only thing I would like would be the cornbread. So I'd eat about ten pieces and nothing else. :D

I miss my Mom's cornbread. She made it salty instead of sweet. Seems like everyplace I go people are serving corncake instead of cornbread :)

I'm pretty much a Jiffy kind of guy because that's all I've learned. Had a bad experience with a martha white product (I think it was mix for pizza dough, but I can't remember could have been brownies) so I don't think I'll ever use her stuff.
That bacon one does sound good and one member of my mom's extended family always makes a really good corn bread/cake/something that has actual kernals of corn in it and isn't as dense as actual corn bread that I just love at Thanksgiving and Christmas.
But now for some reason you've got me craving some good buttermilk biscuits with butter and honey.

Bob's Red Mill GF cornmeal... cornbread recipe right on the package is tough to beat. With minced scallions.

oi very true. Replace half the flour in your pancake mix with corneal and the result is surprisingly yummy

Dip it? Here in the south we crumble up a big piece of cornbread in a glass of milk and eat it with a spoon.

Add a can of sweet corn, chopped red and geen peppers, one small habenero. just before removing from oven add grated queso of choice{Asiago** Serve with BB [beer n'butter]

I lied. Change of plans. Instead of cheesy grits, we're doing cheesy polenta. Polenta from scratch, sharp cheddar, couple of minced scallions. And a whole heapin' mess of toum going on right now. Mmm...
Jiffy is good. Home made is good. I never met a cornbread I didn't like.
