OK, all you Shimano STI experts, can I upgrade my 7-speed Shimano 600 with bar-end shifters to an 8-speed with simply a change to Shimano 600 STI shifters and an 8-speed cassette? Or, is there more to it than these simple swaps? Do I have to change to a different rear derailleur? Thanks for you help.

What do you plan on using for a hub to stick that 8 speed cassette on? 8 speed cassette won't go on a 7 speed hub and an 8 speed freeewhel isn't the hot setup either. If I was doing it I wouldn't even mess with 8 speed unless the stuff was about free.

You can go to bar end shifters. You cannnot put an 8 speed cassette on a 7 speed freehub. When Shimano went to 8 speed, they widened the axle and freehub to 130mm from 126mm. You can replace your 7 speed 600 with a new 7-speed Sora shifter if you want to keep an STI setup.

There is a way to create an 8-speed cassette on a 7-speed freehub by removing a cog from a 9-speed cassette and using a 9-speed shifter of your choice. You'll need to correctly set your limit screws correctly.

ya ....skip 8 speed...get 9 speed b/c it is cheaper now that 10 is out...and find a new rear wheel and 9 speed cassette. a fr drl is cheap so no worries if yours does not do work as well as you like. Oh and a new 9 speed chain would be nice. I hope that you got the space in the back for the new wheel if ya don't you may have to cold set or just forget the 9 speed new wheel idea. BTW I did the upgrade for my brother and he loves it.

So my 7-speed RD works fine with a 9-speed STI shifter?
