Planning on finally re-spraying my folding Raleigh Twenty over next week (think approximately BMX sized bike). How many cans of paint do you think I'll need - I was thinking three 300ml cans would probably do it?

Yup, three cans is the right number. You should be able to get three good coats and have about a half can left over for touch-ups.

I managed with 2 cans.
One of primer (Finnegans no-9), one of topcoat.
Rather than apply whole coats, I tried to get a speckle effect. This stops driping and runing of paint. A couple of speckle coats achieve a complete coating.
